Friday, February 23, 2024 is National Banana Bread Day.
Banana bread was one of my family’s favorites growing up. My mom also grew up eating banana bread. The recipe came from my mom’s Grandma This is a quick bread. A quick bread is a bread that does not use yeast and it comes together rather quickly. It is a way to use up over-ripe bananas you have sitting around. It makes good bread for breakfast or something to pack in the kid’s lunches. I would get excited when my mom would pack me banana bread with cream cheese on it in my lunch when I was in school.
. Here is the banana bread recipe I grew up on.
3 bananas mashed
1 Tsp baking soda
1 cup sugar
¼ cup butter
1 tsp vanilla
2 eggs
2 cups flour
pinch salt
Mash 3 bananas and sprinkle with 1 Tsp baking soda. Set aside. Mix together sugar and butter until the mixture is coarse. Add vanilla and eggs to the butter mixture and beat until well-mixed. Then add flour, salt, and mashed bananas and mix until combined. Bake in a greased and floured loaf pan in a pre-heated 350 F degree oven for about an hour, til an inserted toothpick comes out clean.
Top your banana bread with cream cheese or butter or even eat it plan.
