Mother’s Day Breakfast in Bed

One thing I liked about Mother’s Day when I was little was to make Mom breakfast in bed. Kids love to help make breakfast. Why not make it special and surprise mom with breakfast in bed on Mother’s Day? Make her favorite breakfast with lots of love. It can be something simple like cereal or toast to something more complex like pancakes or waffles.  

Here are some of my favorite breakfast foods that are sure to make Mom happy. 

Soft and Fluffy Buttermilk Pancakes

Ingredients

  • 1 3/4 cups low-fat buttermilk
  • 2 tbsp canola, vegetable, or light-tasting olive oil
  • 2 eggs
  • 1/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Combine buttermilk, oil, eggs, vanilla extract, sugar, and salt in a mixing bowl and whisk well.
  2. Add flour, baking powder, and baking soda and mix just until smooth and combined. Don’t overmix.
  3. Let the batter sit while you preheat a skillet or a griddle (cast iron is the best choice for both).
  4. It’s important to preheat the pan or the griddle first, before cooking the pancakes. Preheat it over medium heat and then lower it a little bit before adding pancake batter.
  5. Add a little oil to the pan and spread it around to grease.
  6. Use a 1/3 cup scoop or an ice cream scoop to get the same amount of batter for each pancake. Add the batter to the hot pan and let it cook without touching it.
  7. Wait for the bubbles to appear all over the top; that is your indication that the pancakes are ready to flip. Use a spatula to slide under the pancake, lift it off, and use your wrist to quickly flip. (It will take 4-6 minutes for each pancake to cook.)

Light, Crisp Waffles

Ingredients

¾ cup all-purpose flour

½ cup cornstarch       

½ tsp. salt

½ tsp. baking powder

¼ tsp. baking soda

¼ cup buttermilk 

¼ cup milk

6 Tbs. vegetable oil 

1egg, separated

1 Tb. sugar

½ tsp. vanilla extract

Instructions

  1. Heat oven to 200 degrees. Mix flour, cornstarch, salt, baking powder, and baking soda in a medium bowl. Measure buttermilk, milk, and vegetable oil in a 2-cup measuring cup; mix in yolk and set aside.
  2. Beat egg white in a small bowl with an electric hand mixer to almost soft peaks. Sprinkle in sugar and continue to beat until white and glossy. Beat in vanilla extract.
  3. Pour wet ingredients into dry ingredients and whisk until just mixed. Add egg white to batter in dollops. Fold in with a spatula until just incorporated.
  4. Add batter (for my waffle iron, a generous cup) to the hot waffle iron and cook until crisp and nutty brown. Set the waffle directly on the rack in a preheated oven to keep it warm and crisp, for at least 5 and up to 20 minutes. Repeat with the remaining batter. Serve immediately with syrup.

Makes 4 or 5waffles (7-inch). The recipe can easily be doubled or tripled.
