Strawberry Picking 2024

What is better than eating strawberries on a cool evening? Absolutely nothing. There are many recipes people think of when they hear strawberries. But what recipe is your favorite to make? Many kids love eating strawberries better than picking them. Strawberry picking involves a lot of bending over, but it is very rewarding to pick strawberries.

Recipes:

Here are a few common strawberry recipes people make:

SURE.JELL Strawberry Jam

Ingredients

5 cups prepared fruit (buy about 2 qt. fully ripe strawberries)

1 box SURE-JELL Fruit Pectin

1/2 tsp

butter or margarine

7 cups sugar, measured into a separate bowl

Instructions

Step 1

Bring the boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in a saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.

Step 2

Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 5 cups of prepared fruit into 6- or 8-qt. saucepot.

Step 3

Stir pectin into fruit in a saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn’t stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with a metal spoon.

Step 4

Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on an elevated rack in the canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if needed.) Cover; bring water to a gentle boil. Process 10 min. Remove jars and place them upright on a towel to cool completely. After the jars cool, check the seals by pressing the middle of the lids with a finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

Strawberry Banana Smoothie:

Serving 1 glass

Ingredients 

1 Banana 

½ cup cut strawberries 

⅔ cup vanilla yogurt

INSTRUCTIONS

Place all ingredients in a blender and blend until smooth.

Pour into a cup and enjoy. 

Strawberries and Yogurt 

Serving 1 bowl 

Ingredients

½  of a cup of strawberries 

1 ½ teaspoons of sugar (optional) 

⅔  cup of vanilla yogurt 

Handful of granola 

INSTRUCTIONS

If you want a little juice with your strawberries, add sugar to them. Then let them sit for 30 minutes to make juice. 

Add your yogurt to a bowl. Top the yogurt with the strawberries and a little juice. Then add your granola to the top. 

Enjoy 

SHORTCAKE

This is from the Fanny Farmer Baking Book revised by Marion Cunningham. 

Old-fashioned biscuit dough shortcakes, warm from the oven, should be split, buttered, spread with sugared berries, and graced with lots of heavy cream.

(Makes 1 8-inch round or eight 2-inch round cakes)

Ingredients:

2 c. of flour                                     2/3 C. milk

4 tsp. baking powder                  Berries or sliced fresh fruit, sweetened

1 tsp. salt                                         Heavy cream (you can use whipped cream or whipped topping)

1 ½ tablespoons sugar

5 tablespoons butter

  1. Preheat the oven to 425 F.  Butter and lightly flour an 8-inch cake pan or a cookie sheet.  
  2. Mix the flour, baking powder, salt, and sugar in a bowl.  
  3. Cut the butter into bits and work it into the flour mixture with a pastry blender or your fingers until it resembles a coarse meal.  
  4. Slowly stir in the milk, using just enough to hold the dough together. Turn out onto a floured board and knead for a minute or two.  
  5. Pat the dough into the cake pan or roll or pat it ¾ inch thick and cut it into eight 2-inch rounds, using a biscuit cutter.  Arrange the rounds on a cookie sheet and bake them for 10-12 minutes or the larger cake for 12-15 minutes.  
  6. Split with two forks while still warm, butter, and fill with sugared fruit or berries, and serve warm with heavy cream.
